Banana Matcha iced Latte
Ingredients:
For the Banana Syrup:
5 ripe bananas (peels only)
1 cup white sugar
For the Matcha Latte:
2 teaspoons matcha powder
2 ounces water (heated to 145°F)
Ice cubes
6 ounces brewed coffee (optional)
2 ounces milk of choice (whole, oat, almond, or soy)
Method:
Prepare the Banana Syrup:
Place banana peels into a mason jar and add 1 cup of white sugar.
Seal the jar and shake well to ensure the sugar thoroughly coats the banana peels.
Refrigerate for 48 hours to allow the sugar to extract flavors from the peels.
After 2 days, strain the mixture through a fine mesh strainer to obtain the syrup.
Prepare the Matcha:
Sift 2 teaspoons of matcha powder into a matcha bowl to remove any clumps.
Add 2 ounces of 145°F water to the matcha powder.
Using a bamboo whisk, whisk the mixture in an "M" motion for about 2 minutes until it becomes frothy.
Assemble the Latte:
Fill a glass with ice cubes.
Pour in the desired amount of banana syrup.
Add 6 ounces of brewed coffee if using.
Pour in 2 ounces of your chosen milk.
Gently pour the frothy matcha over the top.
Stir gently and enjoy your latte!
