The Best Chicken Sandwich
Ingredients:
Chicken Thigh Marinade
6 chicken thighs (boneless & skinless)
1/2 gallon buttermilk
1 whole egg
1 tablespoon Tabasco
1 tablespoon galric powder
1 tablespoon ground black pepper
2 handfuls of kosher salt.
Procedure:
Place everthing into a bowl except chicken thighs and whisk together until fully incorporated.
Add chicken thighs to the marinade. Make sure thighs are fully covered in the marinade.
Marinate chicken thighs overnight.
Flour Mixture
3 cups AP flour
1cup cornstarch
1 teaspoon baking powder
1 tablespoon garlic powder
1 tablespoon ground black pepper
1 tablespoon kosher salt
Procedure:
Place everything into a bowl and mix by hand. You want to make sure there are no lumps in the flour mixture.
Keep to the side for the time being.
Nashville Chicken Sauce
2 tablespoons cayenne pepper
1 teaspoon smoked paprika
1 tablespoon dark brown sugar
1 tablespoon ground black pepper
a couple spoonfuls of the chicken fat from frying.
Procedure:
In a bowl combine everything until fully incorporated.
Once the chicken thighs are done frying add a few spoonfuls of the fat to the spices and mix.
Breading Chicken
Procedure:
Take chicken thighs out of the marinade and place into the flour mixture and toss.
Take them out of the flour mixture and dip them back in the marinade.
Take them out of the marinade and drop them back in the flour for a final toss.
Let the chicken sit in the flour mixture for 1 hour in the fridge. This will allow the flour to really stick to the chicken and give you the crispiest, CRISPIEST! chicken.
Frying Chicken
Procedure:
In a cast iron pan add peanut oil half way up.
Bring the peanut oil up to 375F.
Take the thighs out of the fridge and allow to come to room temperature.
Place the thighs in the pan and fry 3-4 minutes on each side until golden brown and hella crispy baby!
Place the thighs on a rack to drain any excess grease.
Add the thighs to a bowl along with the Nashville sauce and toss.
And now you are ready to build baby!
Building Your Sandwich
buttered and toasted sesame bun
shaved iceberg lettuce
Duke’s mayo (or your favorite, this is mine)
sweet pickles (bread and butter style)
and last but not least that CRISPY, SAUCEY chicken thigh that is gonna have your tongue and mouth slapping so hard!
