Horchata
Ingredients:
Horchata Base
1.5 cups jasmine rice
2 mexican cinnamon sticks ( these are more fragrant)
1/2 cup sliced almonds
enough cold water to cover
Procedure:
Place all of the ingredients in a mason jar and cover with enough cold water to completely submerge everything.
Soak for at least 5 hours but even better if you let it soak for 24 hours. The longer it soaks the better the horchata base will be.
Place the rice, cinnamon sticks, almonds, and water that have been soaking together into a blender. Blend until smooth and not gritty.
Strain through a fine mesh strainer into a bowl to remove any excess grittiness. Use a spoon to push the liquid through the strainer and leave behind the pulp.
Discard the pulp. Reserve the liquid.
Horchata Drink
All of the horchata base
1/2 cup white sugar
1 mexican cinnamon stick
1.5 cups whole milk (or any milk substitute you enjoy)
3 cups cold water
Procedure:
In a drink pitcher place all of the horchata base, sugar, cinnamon stick, milk, and water.
Stir everything until everything is fully incorporated.
