Brined POrk Chops
Ingredients:
Brine
Making you the Juiciest, Most Flavorful Pork Chops
1 cup kosher salt
1 cup white sugar
1 bunch rosemary
1 bunch thyme
2 dried bay leaves
1 teaspoon black peppercorns
4 garlic cloves (smashed)
4 cups water
Procedure:
Place everything into a sauce pan and bring to a simmer.
Simmer until the sugar and salt has dissolved.
Allow brine to cool down all the way before adding the pork chops.
Brining the Chops
Place two bone in pork chops into a plastic container or non reactive container.
Pour brine over the pork chops until fully submerged.
Cover container and place into the fridge.
Allow pork chops to brine for 3 hours. Do not brine longer than a few hours or else it will have more of a ham texture!
Seasoning the Chops
Make sure to pat dry before seasoning.
Season with salt and ground black pepper on both sides.
Cooking the Chops
1 shallot cut in half
1 garlic bulb cut in half
few sprigs thyme
few sprigs rosemary
2 ounces whole butter
canola oil as needed
In a cast iron pan add enough canola oil to coat the bottom of the pan.
Heat the pan on high heat until oil is almost smoking.
Place pork chops into the pan and sear on both sides until golden brown.
Add shallots and garlic and allow to brown.
Add thyme and rosemary.
Add butter and allow to bubble and baste the pork chop with all that F*&$ing goodness!
