creamy Mac & Cheese

Ingredients:

Creamy Mac Sauce

1 pint (16 ounces) heavy cream

1.5 cups shredded sharp cheddar

8 slices American cheese

1 cup grated parmesan

a few splashes of Tabasco sauce

to taste kosher salt

Procedure:

  1. In a sauce pan bring heavy cream to a simmer.

  2. Add cheddar and whisk in until emulsified.

  3. Slowly add American cheese one slice at a time. Whisk in each slice until fully incorporated.

  4. Add parmesan and whisk until fully emulsified.

  5. Finish with Tabasco and salt.

Pasta Shells ( or your favorite pasta)

16 ounces Pasta Shells

1 gallon water

To taste kosher salt.

Procedure:

  1. In a pot bring water and salt to a boil. Make sure the water tastes like the ocean, semi salty!

  2. Add the pasta to the boiling salted water.

  3. Boil the pasta for 10-12 minutes until the pasta is al dente.

  4. Strain the pasta but Do not rinse with water! Rinsing the pasta will wash off the starch and the flavor.

Return the pasta to the pot and add the mac sauce and stir until both are fully incorporated and creamy!

Now you know how to make creamy mac and cheese. Quit! making that abomination you call mac and cheese that you put in a casserole dish and bake in the oven.
