Korean Wings
Ingredients:
Wing Marinade
1 dozen chicken wings
1 tablespoon kosher salt
Procedure:
Put wings in a bowl and season with salt. Mix wings by hand to ensure salt is evenly incorporated.
Place wings in the fridge for a few hours. (this part should be done ahead of time)
Toasted Sesame Seeds
Procedure:
In a pan toast white sesame seeds on low heat until golden brown. (low and slow so you do not burn them)
Remove from heat and allow to cool at room temperature.
Wing Batter
1/2 cup AP flour
1/2 cup cornstarch
1 cup of cold water
2 tablespoons salt
Procedure:
Place everything into a bowl and whisk together until everything is fully incorporated. Make sure there are no lumps in the batter!
Allow to rest until you are ready to batter your wings. This should be left at room temperature.
Wing Sauce
1/4 cup honey
2 tablespoon soy sauce
2 tablespoon rice wine vinegar
2 tablespoon gochujang korean chili paste
1 tablespoon minced garlic
1 tablespoon fresh grated ginger
Procedure:
Place all the ingredients in a small sauce pot and simmer on low heat until sauce has thickened. This should only take a few minutes.
Frying Wings
Procedure:
Take the wings out of the fridge and place them into the bowl with the batter.
Work the wings into the batter, making sure the wings are completey coated in the batter.
Fry these in a frying pan or cast iron pan. I used a cast iron pan. The wings need to be fried in two stages.
Add canola oil half way up the pan and allow it to heat up to 340F.
Once to 340F take the wings out of the batter and place into the pan and par-fry until they start turning a gold blonde color. Remove from oil and place on a pan and set to the side.
Turn heat up and allow frying oil to reach 375F. Return wings to the pan and fry for 1-2 minutes on each side until cooked all the way through and the outside of the wings are crispy-crispy.
Place crispy wings into a bowl and add your sauce. Toss, Toss, Toss baby. Make them saucey!
Put these bad boys in a bowl and finish with the toasted sesame seeds.
